THE LAND

AND THE CLIMATE

Our extreme climate conditions are reflected in the character of our wines.

Very hot summers with temperatures of +40ºC (104ºF) and dry and cold winters with -10ºC (14ºF), with strong northern winds throughout the year. During the summer we have thermal oscillations of more than 20ºC (68ºF) between day and night. This is the reason why we have specialized in making night harvests, in order to preserve the characteristics of our grapes preventing them from starting an early fermentation due to the day heat.

The calcareous clayey composition of the soil, allows us to store the scarce spring water to supply the vine throughout its cycle until harvest. We have slow sproutings with delays of up to 15 days, compared to other areas with the same altitude. All this gives us a vegetative cycle and long and late grape maturation.

ECOLOGICAL VINEYARD

The practice of a sustainable viticulture is our hallmark.

The differential management of the vineyard requires a personalized administration of each vineyard to achieve individualized objectives and yields adjusted to quality criteria.

Our ecological vineyard, with Protected Designation of Origin -D.O.P.-, occupies an area of ​​53 hectares comprising varieties such as Garnacha, Tempranillo, Cabernet-Sauvignon, Merlot, Syrah and Chardonnay.

The fact that the vineyard is located around the winery, allows us to optimize the elaboration process by placing the grape in the winery only a few minutes after being harvested.

Two decades of intense and passionate work have consolidated the Aylés winery not only as part of the landscape of the region, but also as an outstanding quality reference to Cariñena’s D.O.P. wines.

Its marked Aragonese architecture with Mudejar notes, pays tribute to our land and origin.

The Aylés ageing barrel stock is made up of +600 French and American oak barrels.
